Becky, I feel your pain. Mofongo plantains have to be very VERY green...and somehow the ones I get up here, are borderline pintones.

Cinnamon? That's a new one. The other thing I like is the mariquitas mojo you know, limon, aceite, ajo y sal!

Oh God, now I'm making myself hungry!

Mmmm mofongo. Its been so long. Very difficult to get platanos to make any of this stuff in the deep woods.

For fresh made tostones try putting some butter on them and then sprinkle the salt...that's how it was in my Cuban household growing up.

Also, fufú, as far as I know, is Cuban for smashed green plátanos with garlic and pork; in Puerto Rico it is called mofongo. The one that I know with ripe plaintains, is in the Dominican Republic and its called mangú.

Alexis only eats fufu when he’s sick…I can’t bring myself to partake…he makes it with green ones. And I like ketchup with my tostones sometimes…how much of a gringa am I?

*in my defense, my father-in-law likes that sometimes too, which is where I got the idea…
